Located in the Montserrat Hills, it still grades and polishes the beans producing a clean and shiny, very pretty bean to work with. This chocolate has been dry aged for 4 years at Sirene mellowing the taste and melding the flavours into a uniquely elegant taste sensation, not unlike the effect of ageing a fine whisky. It is in VERY limited quantities, only about 500 bars are available--and this is only partly because my family loves this chocolate and doesn't want me to sell any of it. As a result, the price will be going up as stock diminishes. "
