From Sirene Chocolate: "Starting operations in 1870, the San Juan Estate in Gran Couva, Trinidad is one of the oldest estates in Trinidad. Located in the Montserrat Hills, it still grades and polishes the beans producing a clean and shiny, very pretty bean to work with. This chocolate has been dry aged for 4 years at Sirene mellowing the taste and melding the flavours into a uniquely elegant taste sensation, not unlike the effect of ageing a fine whisky. It is in VERY limited quantities, only about 500 bars are available--and this is only partly because my family loves this chocolate and doesn't want me to sell any of it.
